Emily had a doctor's appointment today.  Dr. Cannon wanted to check out a pain that she is having under her scapula accompanied by a cough, so she sent her for an X-Ray.  Afterwards, she did some business at Social Security and took care of some other lingering business from her joint accounts with Gene.

This evening she made soup to share with Lynn and Alan, and some of her wonderful fried cornbread!  It is her very own made up recipe. 

3 medium leeks chopped fine, some green included.  Saute with water and a little bit of butter. 
Sauteed 4 portobella mushrooms in butter (sliced)  added to leeks
Cooked 2 large potatoes (peeled and chopped small) in salted water
1 1/2 cup finely chopped cabbage.
1 carrot chopped fine

Cover raw potatoes with water let it boil fast, Add chopped cabbage and carrots.    Let cook for about 10 minutes Then add seasonings as you wish (Add salt if needed, add a pinch of red pepper.)

Add leeks and 1 rib of celery chopped fine. Cook for an additional 10 min.
Add a teaspoon of dried marjoram (it's best if you grew it in an herb garden and harvested it and dried it yourself)

Add 2 cups of organic chicken broth.  Let simmer until ready to eat.

Serve with pan fried cornbread and drink of choice.
